Boneless chicken thighs, skin removed, fat trimmed off, thinly sliced crosswise 4 tbsp Extra virgin olive oil (EVOO) 4 cloves garlic, minced 3 tbsp oyster sauce 2 tbsp soy sauce 1/4 cup Chicken stock 2 bunches Thai basil leaves, picked off stem Directions Heat oil in a skillet over high heat. When hot, add minced garlic and stir for 20 seconds until fragrant. Add the chicken and stir fry with a wooden spoon for 2 minutes to cook through. Add oyster sauce, soy sauce and chicken stock. Mix gently to coat the chicken. Toss in basil and gently turn meat over leaves until they are wilted. Remove pan from heat. Plate on a warm platter. Serve over brown rice. Slice baguette in 1/2" slices. Place bread slices on baking sheet. Bake for 10 minutes until surfaces crisp. Remove and let cool. Meanwhile, in a mixing bowl, mix sundried tomatoes, olives, capers, oregano, and salt. Mix well with a spoon and combine. When bread slices have cooled, arrange them on a serving platter and top each slice with a spoonful of sun-dried tomato tapenade mixture. Serve at room temperature.
